This is a recipe that has been passed down through my family for many generations.
I'm 50% Cherokee and 50% Irish.
My father was never around,so,I embraced my Cherokee heritage.
This can be eaten hot or cold.
There's a lot of work involved,but,it's worth every bit of it.
So,here it is:
1 gallon of seasoned hickory nuts
1/2 gallon of water
2-3 cups precooked hominy
Honey
Begin by pulverizing nut,shell and all.
Continue to mash until it can be worked into a paste.
Roll into a ball,roughly the size of a baseball.
The kanuchi can be stored like this for a long time.
When you're ready,bring water to a rolling boil.
Put kanuchi in a strainer.
Slowly pour boiling water over kanuchi,making sure the shell stays in the strainer.
Add hominy.
Add honey until desired sweetness is reached.

If desired,you can omit the hominy and drink as a hot soup.
I apologize for the lack of spice,but,this isn't traditionally a spicy meal.
