Anyone tried to have beer in a ferment? Sour beer are made by lacto fermentation and I feel that habanero pepper and a good sour beer would fit well together, especially if aged in a wood barrel.
In fact I want to make an hot sauce with beer and I wounder if beer is a good thing to add to a ferment, Im thinking about putting mashed habanero pepper with 4-5% salt and cover it with beer instead of water.
I've made a fermented sauce with beer but the beer was added after the fermentation. I haven't tried adding it to the ferment. Interesting though, if you make it I'll follow along.
