Lemon Dill hot Sauce

Hey, so I've been trying out a few sauces and experimenting and I really liked this one so I thought I would post.

Ingredients:

-15 red scotch bonnets
-1/2 ounce cayenne powder
-1/4 white onion
-2 table spoon tomato paste
-4 tablespoons lemon juice
-1 table spoon ginger powder
-1 tablespoon paprika
-2 or 3 tablespoons dill weed

add water until desired consistency

blend all together and simmer for 20 minutes.

I fermented the scotch bonnets, but I guess you don't have to if you use enough lemon juice.

I used dried dill, and what I added was enough for me to taste it. Again, this is just what I did for my liking.

I fermented in 3% weight brine. Left out with a loose lid until it started.Then air locked. Sat for about a month. Nothing special.


any suggestions would be very openly welcomed
