Looking for a recipe similar to Cholula

From the Cholula bottle the main ingredients in order are:

Water - check
Peppers (pequin and arbol) - check
Salt - check
Vinegar - not sure what kind to use, white? cider?
Spices - hmmm... ill have to work on that
Xanthan Gum - check

Any of you have suggestions or experience making something that resembles Cholula? Seems like I can get everything besides their secret "spices" and type of vinegar.
 
As Cholula is owned by Cuervo maybe some Tequela :beer:
Actually, I dont think there's any in there but based on the taste I'd think just white vin, garlic and onion powder.
 
I'm just noticing this now, but why do they use both water and a thickening agent? You'd think that you'd be able to balance that somehow and omit the xanthan gum.
 
I'd assume they use the water to........*ahem*........water down the product. ;) In other words...to stretch out the recipe and obtain the desired flavor.




I'm for the tequila idea.

It's an emulsifier, meaning it won't separate.
