Looking to make my first large batch

I am looking to make my first large batch of sauce. I want to make a few pints. I nervous about ruining a bunch of pods.

I have a few things on hand.

14 Grams dried habanero pods
14 grams Piquin chilies (dried)
57 grams Arbol Chili pods (dried)
57 grams Chile Morita (dried)
Pleanty of dried Guajillo pods.
a few fresh Jalapeno pods
some powder I made from Jalapeno cores
Red wine vinegar
Apple Cider vinegar
White vinegar
Citric Acid
pleanty of cloves of garlic
I also have a few things in my spice cabnet.

What should I do for lets say.. 5 pints. Im not too good at determining what portions of things I should put together yet.
I guess what I am asking is what would you do with these ingredients?
 
well my first thought would be to leave out all the liquids and make a kick-butt chile powder!



but for a sauce you'll probably need nome other ingredients to bulk it up. Carrots (will make it sweeter), onion, garlic, tomato, .....
 
Picked up some onion and carrots. I will be putting together something tomorrow. Basically what I am wanting to know is how many grams of peppers should I be using. I am looking for a deep, smokey sweet flavor with a risidual heat. Like a spicy BBQ sauce. Something good on Beef, Chicken, or, Pork.
