Hi there and welcome,

I have Mad Dog 357 silver - it's one of those that comes with the little bullet keychain.

It's says it is 750,000 SHU and made with extract that rates at 6 million SHU.

To me, it tastes like coconut, albeit damn hot coconut! One sauce vendor has told me that is the taste of the extract overpowering everything else.

To be honest, I don't like it, and I think it's a cooking additive rather than a "sauce", but each to their own.

I do prefer Bhut Jolokia based sauces over Habanero for taste, so all of this is just my two cents.

Regards,

Tim

There you go hotsun - two replies and two different types of answer.

One says they don't like extract, one says they do (that's right isn't it Joe ?).

I'm sure you'll know where you stand really quick.
Funny though, I don't mind Blair's 2am and that's a habanero based extract I think. Haven't gone any further up the chain of Blairs products than that, but perhaps that's for the best ...  :mouthonfire:

Do you have the opportunity to try before you buy? Might be a good idea since the "hotter" sauces can cost a fair bit more and it would be a shame to waste hard earned $$.

Regards,

Tim

It's important to learn to read catch phrases and to interpret verbiage.

I make a few sauces with Bhut Jolokias {which are rated as (very hot/thehottesteintheworld/over1millionshu) depending on what you read} but that doesn't mean the sauce will FryyourFace.  It's all about ratios and proportions.

I get this all the time with our Pure Evil which is 1.5mil SHU (lab tested and prompted as a 1.5mil SHU product) but MADE WITH 15.2mil shu refined capsaicin powder.   People get it mixed up all the time and say they are tasting 1 drop of 16mil (NOT correct)... etc...    The Product is 1.5 mil....

Some products are made with extracts and other ingredients.  After doing the math, just like a recipe for calories, how much capsaicinoids to [everythingelse} ratio does it end up with?  THAT is the SHU of the product.

It could start with 500,000SHU extract, 1.6million shu chiles, 18zillion cabananoids....but when all those 'noids are mixes with other ingredients....what's the final SHU?

That! is the final answer!  (which most people don't get...  )

Oh, and yes, MadDog and most other products that are over the 2-mil SHU range are usually classified as "food additives" not Hot Sauces.

Most sauces contain enough other ingredients that their SHU is less than 1 mil.  Many chiles and chiles purees are at and above the 1 mil SHU mark.  These are usually sold as pepper puree/mashes/etc/and that's a whole other topic!   ;)

And over 3 mil is for another topic.

Another way to think of it - drink pure cordial and it's sweet.

Add water, and not so sweet, irrespective of whether the pure cordial was really sweet, mega sweet, "worlds sweetest", etc

"Sauces" up to 2 million SHU? Holy cow batman !

Extreme heat with flavor without extract is done, but unfortunately Joe Public tends not to get a lot of flavor because the extreme heat seems to overpower it.

I have until now experience only of 3 industrial hot sauces, first 2 have extract.:
Blair's Ultra Death
Mad Dog Silver Collector edition
Cajohns Moruga Madness

Ultra Death is declared 800k shu, it's very very hot, if you put a minimal part you can feel it.
I like the overall taste and it's good mixed with tomato, pasta and other things. The problem is that often you can fell a bitter flavour. Not bad anyway.

Mad Dog Silver is declared 750k shu. That's strange, if i use a minimal part on direct contact with tounge maybe Ultra Death is stronger... Aside that, for heat factor, Silver destroys Ultra Death. I think 1/2 teaspoon is as hot or hotter than 1 teaspoon of Ultra Death.
Taste... Is sweet, but you taste well some strange unpleasant flavor, maybe it's the extract. I don't like it on pasta or pizza. I surely prefeir Blair.
Btw i found it fantastic on goulash. No extract taste, flavour was very good. Aside that use i don't like it in general. But it's merciless as heat factor.

Then i tried Moruga Madness, no extract. No way as hot as 2 above but on a different league as flavour. Very very good. I bought it for my uncle and was very satisfied.
