Me too... My first try at a sauce... With what i have

Hi Guys, Here's a glipmse of my first attemp for a Hot sauce!

Ingredients :
(see picture) Ok maybe not not dont know how to upload a pic her

Some Cheyenne pepper (yellow Pods) 75% of the pepper in this batch
One long cheyenne (the green pepper)
2 small Jalapeno Milta
One "hungarian wax hot" (which is not hot at all!!!)

anyway

here's my recipe (because i dont have 3 pound of pepper !!!!!) i live in canada, i just bought my new home and i bought my peppers because i could not strat them this year due ot lack of space.)

so i had about 4 oz of pepper (about 100 grams)
1/4 cup vinegar
1/4 teaspoon of pckling salt
1/2 teaspoon of maple sirup
1/2 teaspoon of minced garlic
Add apple vinegar till you are to the right consistency of the sauce in the blender.
this sauce was pretty hot (for me) but taste good and fit well with pork!

sure it's not jolokia or scorpion level but for a starter like me that was good and i love this sauce! simple hot and tasty! (nothing to KO your tongue)
so im pretty happy for my first try and i love my recipe!

Next step is to get some good rare peppers and make some nice unique stuff! (next year if i can get my hand on some weird seeds and tasty peppers!

Well done. Maple syrup is an interesting choice; never thought of that.
I also got lucky on my first sauce; it's been a keeper for sure. I use pumpkin for my base. Cheers
 
Sounds really good Hammerfall, you didn't mention anything about cooking it or how you processed the sauce. I'm not trying to trouble shoot you here I just want to make sure that we all stay safe and on someone’s first sauces that they remember that if they didn't use proper canning procedures that they keep the sauce refrigerated and not leave it out for any period of time. Food poisoning is not something to be desired.

I’m looking forward to seeing some pics of the sauce when you get them up. Try photobucket, it seems to work well for a lot of people.

i will try photobucket tonugt or tomorrow if i have some time.
for the sauce i made it boil for at least 10 min and oncce my peppers where all tender and slushy i put the mash in the blender and added apple vinegar to make it at the texcture i want. good thickness in the end! very good taste and a good gradually hot feeling at taste.. not the BAM type but much more progressive !

More to come!

i now need more pepper but this year im limited to some plant and im curently looking for seed for next year season.
since im located in the north there is some peppers that will give me trouble to grow... but i will start them early in febuary next year to have them big enough to give me good peppers at harvest time!
 
Great to hear. Check out the Fermenting 101 thread if you want for more in depth guidelines on bottleing.

Something to try, take another taste of your sauce and keep that flavor in your mind. Then wait until Friday or if you can, I usually can't, wait until Monday and taste it again. Youll see a marked improvement in the flavor of the sauce as the flavors all marry and get happy together.

Just a small update... this sauce is a blast!

completely love it everywhere! a nice heat coming slowly but powerfull!
color is pumpkin orange this is a nice mix! i will make more for sure!
