Shish kebabs are Turkish... my favorite is the kofte kebab, which is marinated ground lamb. They are skewered and cooked over a fire, and then served in a pita with yogurt sauce. Your marinade can include olive oil, yogurt, cilantro, salt, pepper, cumin, and whatever you like. For shish kebabs marinate whole pieces of lamb. For kofte kebabs, mix a little of the marinade with the ground lamb and make a meatball shape, but flatter.
