Need help making mash for sauces

Hi! I am tre the WINGMASTER from Brantford,ON Canada! I am looking into making a mash for my Scotch bonnet hot pepper sauce! I make a suicide wing sauce out of the Scotch bonnet peppers but I go thru too much of it to keep up! I wanted to make it in bulk so then all I have to do is season it as I go. Love to learn more about the pepper mash making if I could. Any tips are appreciated or any books I could find - websites would be great! Thanks!
