Need help perfecting a sauce!

I am working on a Mango-Kiwi sauce right now and have it pretty good, but not great.

Anyways, this is what I have so far:

2 mangos - peeled, cored and sliced
3 kiwis - peeled and sliced
juice and pulp of 4 limes
1/2 cup apple cider vinegar
1 cup coconut vinegar
 
Kiwis are tart a bit, and with 4 limes, I think this is pretty tart. Coconut water vinegar is good why not use all of that instead of ACV also? I don't add water to sauces. That's all the comments I have. Sounds like it could be good.

One more thing. Change the molasses to honey. Molasses is for BBQ, to me. Honey works great with limes and fruit.
 
AFAIK kiwi fruit seeds are slightly bitter when crushed, I'd be careful when pureeing the mix. Also as THP said switch to honey, I think molasses is more suited to BBQ sauces as well.
 
+1 on the molasses vs. honey. I would do honey. Infact I to am trying my luck at sauce making this year and will be ding honey also. Sounds like a yummy sauce though. Keep us posted.
 
I'm getting ready to try another batch, I just have to find some habs first... The ones I have found have been green or rotten. I will try you guy's suggestions. I will cut out the lime unless I feel it needs some. Just not as much as before.

I recently got a quart of wild honey, so I will give that a try as well.
 
Instead of water try using a juice. I use Libby's all natural 100% pure Tropical Fruit Juice in one of my sauces. I agree with THP cut the ACV. Are you using molasses to get a little "rum" type flavor or just as a sweetener? If its just a sweetener, as said before try honey instead........or for something a little wild try Bhut infused honey!! And if you are trying to get a lil "rum" flavor again go with the honey and add a bit of coconut rum (like parrots bay).
