Need help

My brother in law gave me around 5lbs of cayennes. I took a bunch and stuffed them in jars and filled with vinegar and have them sitting waiting on the peppers to breakdown. The others I stung and let dry. Then I cut the stem off and put them in a blender and chopped them up and added vinegar to it and poured it in jars and also have them sitting out. Is it safe I didn't boil the vinegar or refrigerate anything. The jars were clean though.
 
Probably not. If the dried ones were thoroughly dry and you had left them alone, they would be fine. Any time you introduce liquid into the mix, you have to worry more about nasties - like e.coli bacteria. There are many sites with recipes for pickling and/or brining vegetables, including peppers, on the internet. All of the good ones will have you boil the containers (jars and lids) as well as water and/or vinegar, for food safety.
