Been a rainy weekend here in Little Rhody so I've been going through last year's freezer stash to make some room for this season. I had a few yellow peppers left so decided on a mini (read ONE lonely bottle) batch of sauce.
2 Yellow Fatalis
2 Yellow Ghost
1 White Fatali
2 medium Lemon Boy tomatoes
4 small garlic cloves
about 1/4 cup vinegar
1 tsp pink salt
Came out a beautiful bright yellow and tastes great... forgot how good those Fatalis are! It's hot for a non chilehead but around these parts maybe a 3/10 heat level. Had about 1/8 cup leftover that is going on my pork chops tonight.
I can't wait to try it on some pan seared sea scallops or grilled salmon!
