dehydrators Nesco Dehydrator

I'm breaking in my dehydrator trying out some store bought jalepeno's and habanero peppers. I'm gearing up for the summer harvest when I will have an abundance of peppers that I do not want to go to waste. Other than sauces and salsa's I'm planning on drying many of them and making powders and rubs with the rest.
After 10 hours the habs look almost done but the jalepeno's still have a few more hours before they are finished. They were really large ones. 
 
I've got the nesco as well, thing works like a champ!


...and jerky is a must, it is amazing out of this thing. The little packets that first come with it actually season it up quite well too. Now i try all types of outlandish style marinades though

Slow and low, 10 hours habs should still seem fresh ;)

How long does it take usually for a small pepper like a hab ? I cut mine in half and they still took 16 hours. I'm guessing it would take at-least 24 hours leaving them whole.
 
Cut in half. Smart. Cut side up?

Humidity where you live has a slight affect. I think 16 hours is about right but JHP dries WAAAAY more pods than I do so he would know better.

yes cut side up so the seeds didn't fall out
 
Just got one at a yard sale for $10.
Never used.
WITH a thermostat.
 
Found extra trays online (old model) so got 4 more.
 
 
My last Nesco made it 5 years of heavy use before the trays fell apart.
 
I love mine smoked, so now I cut them in half, skewer them, and put the skewers in a Little Chief for a couple pans of smoke-------then dehydrate them, seedy side up.

I only had 2 trays of habs and 2 trays of jalapeno with plenty of space between peppers and left 2 empty trays on the machine.

That was my first time using it and thats what I did. Next time I will try no spacers and see if it makes a difference.

I also have a nesco with a thermostat (I make beef jerkey for my dogs - spoiled little babies). Do you set it to the lowest and let it run or do you play with the temps a bit? Also, do you 'have' to put it outside to dehydrate?

You don't have to put it outside.... But others may actively persuade you in ways!
If I ever tried to dry super hots in the house again I believe my fiancé would leave me, and my dog/cat would maul me in my sleep!
