New From Oregon

Hello TheHotPepper from Oregon. I have been lurking for an about a year or so gleaming information from all of you as I start growing my own peppers and making hot sauce.

My name is Aaron and I started playing around with making my own hot sauce about 2 years ago. I have always made it and refrigerated right away not knowing what the shelf life would be. After that first batch I started reading up more on how to make hot sauce and processing a little more. I still put them in fridge right away as I don’t trust my ph strips since they are hard to read. I recently have gotten into fermenting them as well. Have my first batch fermenting as we speak.

I love peppers, I have access to super hots (reapers) that I put on my hot sauce. I have started to dive into varieties and mixing them for depth of flavor. I grow jalapeños, haveneros, sweet peppers and Thai peppers as a staple so far. Nothing like walking out to pick homegrown peppers for some poppers!!
