New member from Sarnia, Ontario, Canada

Hello everyone,
I have spent 1/2 my day browsing on this site. Lots of great info, Thank you!
I am new to the world of hot peppers, growing only jalapenos (for about 10 years now).... and I LOVE THEM!
This year I decided to try 2 cayenne plants, both are growing fantastic and loaded with peppers.
Now... to decide what to do with them.
I was hoping to use them fresh in recipes or possibily just cut them up and freeze them to add later to dishes.
I have dabbled thru the 2 links below, not finding any recipes for fresh cayenne.
I'd love to make my own spice or sauce, but they sound complicated. (I've never canned or preserved before)
I was thinking of making them into poppers like I do my jalapenos (with cream cheese, red onion, garlic powder & bacon)
but I doubt I'd even have the nerve to try them for the heat LOL.

NOTE: Most of the hot peppers I've been reading about in this forum, I've never even heard of before.
Our local nurseries sell cayenne, red chili (are those 2 the same?), habaneros & jalapenos.... that's about it.

Greetings from Virginia! I also have a Cayenne, I'm just drying my pods in a dehydrator as they ripen to make flakes/powder.
 
:welcome: from KS. Cayennes are best picked red, dried and ground into powder. They bring a lot of heat, but not much flavor IMHO. I think you would be better off stuffing and cooking your jalapenos. See the popper thread for more details. If you want a good stuffing pepper, the NuMex Big Jim or Heritage Big Jim bring both heat and flavor to the party, or you could go more traditional and use a poblano, although it doesn't have much heat. Of course, you can add cayenne, or hab powder or some other hot variety to the filling to kick up the heat. It's all good.

Cayennes are not my favorite and usually taste best dried(powder or flakes) or in a fermented sauce. They are not so good fresh in my opinion

Dry them out and make powder/flakes.
You can smoke the dried pods add little smokey flav.
