New Red Habañero Sauce Today

Hello everyone,
 
I had 10 Caribbean Red pods to do something with.  I have been making micro batches of pepper sauce for myself and 1 or 2 giveaways, here and there.  I was aiming for Marie Sharp's. 
 
Missed on the color.  I used 1/2 cup carrots, 10 Red Habs, 1/2 cup Sweet Onion. Maybe Habs weren't red enough.  Carrot/Onion diluted color.
I wanted the texture to come out.  Mine is a tad more runny but I was afraid to simmer much more and I didn't want to use gums.  5 more minutes....
Seed /No Seed.  I de-seeded all but a couple of pods that had perfect seeds.  Marie has a few seeds. 
Produce:  Fresh Ingredients.  Farmer's Market carrots, Music garlic from Filaree, Sweet Onion, Fresh Lime Juice, Vinegar. 
Taste:  Mine is a bit sweeter and less sodium. I attribute the sweetness to the onion and garlic.  No additives for sweetness.  I used sea salt sparingly.
 
 
Bottom Line:  I Love it!  haha.  I am very pleased.

Epilogue:  Last weekend, I transplanted the Carib Red to make room for garlic and keeled it.  Or near. :rolleyes:  It'll come back....
