Hi all - my name's Chris and I'm from London.

A new chillihead and collector of hot and super hot sauces since February.

I have a couple of questions if you guys wouldnt mind?

1 - They say you should consume the sauce within 3-6 weeks after opening but my fridge is cold and I reckon they are ok long after that - am I right, or am I being dumb? How long is it safe to eat them after the 3-6 weeks?

2 - I've heard of 7-Pot and Trinidad Scorpion chillis but not seen any sauces with them in - can anyone recommend any?

3 - Right now, my collection is:

Dave's Insanity 2009 Special Reserve
Dave's Temporary Insanity
FireFoods Infinity (so much hotter than anything else!)
Trinidad Hot Green Habanero
Bubba Gump Hot Sauce
Who Dares Burns Naga Chipotle
Blair's Pure Death
Melinda's Scotch Bonnet
Cholula Chipotle
Tennessee Hot Sauce
357 MadDog
Tabasco Habanero
African Hot Pepper Sauce
Mr Singh's Hot Chilli Sauce

....so I;m a total newb. :)

Does anyone have any recommendations? Are there any glaring additions that I cannot do without?

The Hippy Seed Company has a sauce made with the Trinidad ButchT scorpion in it, called Skobiyan. He also has one with a Yellow 7'd in it, called Yellow 7 Turkey Slap. Why the Turkey? Because it has Wild Turkey in it!

It's just a damn shame it costs so much to have them sent to the states....:(
