For a mild pepper to put on salads, something like
Aji Fantasy might be a good choice. It is quite sweet tasting and typically about half as hot as a Jalapeno or even less. A very mild pepper.
For a large bell type pepper, I think
Tekne Dolmasi is really good. It is a Turkish stuffing pepper. Sweet, and gets even sweeter when cooked. It makes really tasty stuffed peppers. Trent has seeds on his site:

It is hard to be sure whether you will like a particular variety until you actually try it. You can read the description on the vendors site to try and get an impression of what it is like. You can find pod reviews for many varieties on YouTube. And you can look up comments here on THP as well. Then pick the varieties that appeal to you the most and grow them out. Figuring out which varietes
you like the most is kind of a trial and error process. The key is just to enjoy the process of discovery!
