Orange Manzanos

Found these Orange Manzanos at the grocery store today ($4.99/lb). Will probably stuff them with cream cheese and chorizo (after having 1-2 raw), but looking for any other suggestions/recipes. Check them out:

THOSE ARE BEAUTIFUL - oops Mine are about half that size and I happy with them. Other than stuffing - you can use them in virtually anything you make. The thick flesh is perfect . Take the seeds out those are like rocks and save/trade them

I see similar here, listed as Yellow Mexican Perrins.........I've bought them in the past for the seeds. I like the idea of the stuffing. Maybe even Lamb or Veal with rice?
I add them into a citrus salsa....Pine, Mango,.Chayote....My wife doesn't have the heat pallete that I do. That's one salsa that she really enjoys

I love Manzanos. They're one of my favorite peppers - something about those black seeds. It's a nice flavor with a smidge of heat, but I'm not sure they're much hotter than a wax pepper (e.g. not very hot) - I've used them in hobby sauces before and they add a terrific flavor, but at $5/lb they're pretty pricey for what they are. If I recall, I used them with orange Habs to make a terrific med-heat sauce.

They'd be perfect for stuffing - I'd go with a ground pork/lamb/beef mixture like an Italian meatball spiced however you like with either asiago or jack cheese depending on your seasoning. :cheers:

I also used these in my last throwdown entry, the blurry Torta - I sliced them thin along with Anaheim chilis and sauteed them in olive oil with garlic and Julianne'd white onions - they were fantastic.
