I would wait until the weather cooled off before cutting anything back. The pruning can stimulate new growth, and the new growth would be particularly susceptible to cold damage.
Not to mention that they are still producing if you are somewhere that you can overwinter. Most of the overwintering mentioned on this site refers to digging plants up and wintering them inside.
My plants are still producing really well, but there is no way a pepper would survive outside here.
Just make sure you dont bring the bugs inside and infect all your other plants.. thats whats stopping me.. ladybugs i got keeps them at bay, but theres allways a chance of tracking them indoors.
