water Overwatered vs first pods low heat

So I gave my neighbor a ripe bhut and Prik kee to try the other day.  He found the bhut to be about jalapeno strength and the PK to be wicked hot.  It could be early fruit mildness, but my money is on me overwatering.  Tried a sliver from one I picked earlier and froze and found it pretty hot for a tiny bite.  I let my neighbor try it and he said it was hotter than the last one, but still not as hot as the PK. 
 
So now, I'm going to slow down my overzealous watering and hope a little more stress might help them out.  But I have some questions...Has anyone tried starving their plant for a while, getting the leaves good and wilty and then picking the peppers and testing it vs. one on a well watered plant to see if there is a difference?  What about fresh off the plant vs. picked and eaten some time later?  After fruit is set and ripening or ripened, is it too late to try to ramp up the heat?
 
I'm curious to see how that works out for you. With my plants, I've erred on the side of watering them a little more in the past, however, with the plants I put outside a few weeks ago, I've effectively let them be watered by the rain, and thus far, they haven't wilted, etc. The only thing resembling water I've given them is a weekly foliar treatment of liquid worm castings, and even then, I only use what water is present in the solution straight out of the bottle.
 
Its a hard call, I do believe the more the plant matures the hotter they get, but jalepeno hot is higly unacceptable

As far as denying water this early in the season in the name of stress for hotter peppers, it would be a intresting test, most that I have seen here, and experienced myself has led to ber, I would be patient

So should I just leave them on the plant longer, or pull the current ripe ones and hope the next ones to grow turn out better?
 
i just ate three bhuts with my dinner idk what happen to them but they are not hot even tho they look pretty nice my guess was over watering too
