I introduced myseld in the welcome section but thought I would say hello down here too. This is truely a great site, there is so much information to absorb it's fantastic. In Australia the hot sauce market is really in its infancy the market is not yet educated to the finer flavours and details of hot food, certainly from regions out side of asia. Its either too hot or not hot enough ( as sauce makers you all got to love the hero in the crowd
