Deep fried and smoked turkey are the only way to cook a turkey IMO. Decided to do a smoked turkey today using Pecan wood, injected with a homemade creole butter and rubbed down with creole seasoning. Trying to hold temps between 275 and 300 F.

Turkey tied with butchers twine and smoker up to temp. Get that turkey on there!
