Ok, I keep hearing this and am not completely sure I know the correct definition. What is pepper mash? Is that fresh peppers smushed with certain additives (ie: salt, lime)?
So if I went with a company that sell pepper mash as opposed to regular dried peppers, they will taste quite different, correct?thehotpepper.com said:Aged diced peppers (with vinegar, salt, spices, whatever) that ferments and turns into a mash to be used as a hot sauce base or can be used alone.
That's what I thought. Thanks guys!thehotpepper.com said:Yeah, the mash is a product in a jar. That's like comparing dried fuit to fruit preserves.
