Pepper Source

Hey, looking to experiment with some hot sauces but have a very limited access in the local grocery for peppers. Does anyone have a good mail order source for a variety?

www.peppers.com has a massive variety of hot sauces, shipping is quick and free if the order is over $75. I use that site to buy cases of El Yucateco XXXtrahot. The Hippy Seed Company has some really good hot sauces I hear, but it gets to be a little expensive shipping all the way from Australia.
 
I think he is looking for fresh pods to use when experimenting with making hot sauce...which at this time of year is going to be hard to find...

That's right! Looking to make my own hot sauces. What about dried peppers. Never have tried dried peppers but maybe worth doing in the dead of winter.

+1 to AJ - this time of year you're only going to find what are typically imported pods in the "popular" category for the general public - not necessarily your favs. So generally for pods of any heat level you're going to be limited to jalapeƱos, habaneros, serranos, and poblanos, and maybe a couple others, unless you find a specialty store that's selling for someone with a serious greenhouse setup. But consider that if you haven't ever made hot sauce before, it might not be a bad thing at all to experiment with some of the more common pods just to get some experience - not to mention they're less expensive if you create a batch that isn't quite what you want it to be.

I can get you powdered chipotle peppers that are hot. Nice flavor. They smoke the red peppers. It is over 10 pounds of red jalapeno per pound of dry powder. So you get the peppers cheap compared to peppers. Also being ground up it makes a very smooth hot sauce.

Very low price and shipping. 2 pounds of powder for $25 including shipping.

This is by far the best deal around for hot peppers for hot sauce. nothing else comes close. Most places charge $25 for 1 pound plus shipping.

If you add water to the powder the red ripe jalapeno will reconstitute at about 2 1/2 gallons of pure jalapeno mash. I use it at one pound per 5 quarts and it comes out plenty hot. To that you can add other things. I like to reconstitute with fruit juice. It really comes out great that way. Easy to add lots of flavor.

If you want to thicken it a little bit just add some jelly for flavor and thickening. I like to add a little raspberry preserves. I also use cans of apricot & peaches for flavor. I am still experimenting with this. But it is a terrific way to go.

$25 makes over 2 1/2 gallons at 30 ( 5 oz ) bottles = 75 bottles hot sauce for $25. Hard to beat unless you have a big garden. Even then it is less work to buy it then to grow it.

I have also made the hot sauce by mixing in fresh peppers both hot and sweet for experimenting. I also have lots of hot sauce that I can blend.

Send me a PM if you are interested. You can have more or less than 2 pounds but that is a good starting place.

If you put the powder into a glass jar in the freezer it will last almost indefinitely. This is fresh 2010 crop. It is good to have some of this in your freezer for times like now when you simply want to make some.
