if temp is cool enough in your house...you could go a week or so...until they start decaying basically
keep them cool, dry, and go ahead and sort them. remove any that feel 'soft' or have compromised skins..wormholes, etc. leave the stems on until you are ready to wash and then dehydrate. wash them with stems on, them remove stems, de-seed if you do, then slice and dehydrate. good luck!
