Pepper uses

Hello all, I decided to grow a lot of new varieties this year that i have never tried but that i have heard were good here on THP.  I wanted to get some opinions on what you guys think are some good uses for these varieties i am growing for the first time. Things like the jalapeno varieties i know are good for pickling, sauces, and fresh and the cayenne varieties i will make some pepper flakes and sauces, tobascos are good for pepper vinegar and sauces, 7 pots and bhut i put in sauces and did powders last year and those were good. But how about some of the others, are they good for sauces, powders, smoked, fresh etc...If anyone has a pepper they grow that is on my list that they think  are especially suited for one use or another, let me know.  Grow list is below, let me know what you think and thanks for looking.
