I've tried boning down the chicken spine,I cant get the loin out.Would someone please put a how to video on this wonderful piece of meat.I want to make a chicken wellington this weekend.
The cut they call the tenderloin is the breast muscle... the inner pectoral muscle to be exact. The strip you remove from the breastbone.
For marketing purposes some call it a tenderloin. Plah! Has nothing to do with tenderloin. "The tenderest part of a loin." Ain't no tenderloin in a chicken, lol. Maybe a tenderbreast.
