Process authority Florida

Check with local universities, especially ones that have a food science department or food labs.  Also, you can use a PA from any university or lab, doesn't have to be local to you or in FLA.  I believe Cornell (in New York?) has a PA that several processors use.

Yes.  Every shelf stable  sauce or food product that is to be sold has to be reviewed by a Process Authority, someone who is trained in food sciences, usually a PhD or something.  They test the product, review the process of how it's made, ingredients, etc and then either approve, deny or suggest changes to the process.  Once a food processor has the approval of the PA, then they can proceed with the rest of their licensing to legally make and sell sauces. 
 
Darn Ann, there's testing involved? I thought they just tasted it and if they liked it you passed   :mope:
