smokers Pulled the trigger.... Twice! Insulated vertical smoker porn...

So I have officially taken the plunge on a real deal smoker.  We have used basic Brinkam bullet smokers and Weber Kettles for years and won some local comps.  But while selling my Relaxin' Jack products I always get asked if I do catering....
 
Well, time to expand the business model.  I just pulled the trigger on two of the Humphreys Battle Box vertical smokers.  Not cheap, but its a business expense and all of these big companies just right it off anyway.   ;)  lol  
 
I am doing one in the green/black colors below and the other will be all matte black.  I should know by the end of the day what my expected delivery date is.  Probably 5 weeks + or -.  I went with two of this medium sized units vs one large (the Pint or Down East Beast modelts) so I can run them at different temps.  5600 square inches of cooking space per unit.  All stainless steel racks, 8" run flat castors.  And a DigiQ and fan to help maintain my temps.  I have my Qualified Food Operator test on Monday and two buddies who are ready to start feeding me clients.  Besides private gigs I should be able to vend bbq sandwiches and sell by the pound at the farmer's market in town.  I CANT WAIT to start playing with this beast!

Nope they run on charcoal.  If you look at the second pic I posted you can see the firebox on the bottom of unit just below the water pan.

The green one does look gas however, what is the valve out the side?

I like my sauce on pork and chicken.  Sweet and tangy.  Its thin but is meant to be a mop sauce.  A few coats of that sauce towards the end of cooking yields I nice glaze.  Lots of apple cider vinegar and local CT honey!  Salsa Lady drinks it straight from the bottle.  The rub goes good on everything.  It has developed into my house seasoning. BBQed meats of course and even steak and burgers.  Although I go light on it when doing steak.  Grilled eggplant, portabellas are the bomb with it.  And don't bet me started on BBQ kale chips.  :)
 
i'll reserve the srf tenderloin and handle-on chops in the freezer for them, and i'll do it up towards the end of next week(end) ...

I will dig up a pic of us competing over the last 5 years. El cheapo brinkmans and kettles yielded us 6 or 7 trophies. In that set of trophies are a Grand Champ and a Reserve Champ. We will do 2-3 comps this season. I wanted to do more but with trying to kick off this catering biz I need to make money catering vs spend money on the comps. Comps would be fun with these units and the dgigiq. A lot less time stoking the fires and more on presentation and getting drunk. Lol

Similar concepts. Although my unit ( I just like saying unit) is often compared to the Backwood Chubby (that is the real name lol). But my Battle Box is much bigger than the Chubby. true story.
