I had a bunch of cayenne peppers some I stiffed in a mason jar with vinegar. The others I hung to dry then I cut the stems off and put in a blender with vinegar and poured it in a jar. Is it safe to do this. I haven't put them in the refrigerator either.
 
Not recommended without refrigeration or boiling on the stove. The reason being is that botulism or other food-borne illnesses can thrive in that environment, even with the low pH of vinegar. I would recommend boiling them in vinegar first and also sterilizing the jars in a hot water bath for about 10 minutes. If you hermetically seal the jars after this, they will be less likely to harbor food-borne illness and can usually be kept out of refrigeration until the seal is broken.
