chinense reaper pairing

What fruits pair well with the reaper .I'm making a hot sauce &need ideas cause I wanna use fruit juice in the base I need to know what fruits would pair well with the heat&flavor of the Carolina reaper
 
I made a pineapple reaper sauce/spread type thing once, it was really good. Raspberries sound really delicious. I bet blueberries would be killer. 
 
Are you going for mainly sweet, or savory? I used a carrot and onion base along side the pineapple with the reapers, but I don't think onions would work with raspberries or blueberries. 
 
I don't have an exact recipe for the sauce I made. I kinda just winged it, but it was about 3/4 Cup Raspberries, one large yellow onion roasted on the grill, 2 heads of garlic ( wrapped them in foil and cooked them along side the onion until they were roasted) 1/2 cup vinegar, 3/4 cup water, 2 tsp salt, 14 frozen reaper halves ( 7 full pods) and a few Ghost halves. I cooked all of that in a sauce pan for about 45 mins and then ran it in the blender, after that i just ran the sauce through the food mill re-heated and added about 3 tbs honey, and then bottled it. You're going to want to run the sauce through a food mill because the raspberry seeds are so small and not good to have in the sauce. 
 
How many reapers should I put in compared to the other ingredients ((fruit garlic sweet chili&honey)) it will be vinegar based

:think:  i have 10 -12 ripe Primos in the garage right now, and frozen pie cherries from the garden in the freezer  :think:    Hmmm  :D
 
Update sauce is made& ageing. I used 4 Carolina reaper in the whole batch along with 2 plaboano . I used marichino cheeries& blueberry juice cut with acv .along with a few other things .
 
What have I done wrong I took out the sauce today to stir it it's started fermentation. But from the scent I don't pick up any spice. I smell the floral fruityness of the reaper cut with the lime &acv. But no real heat . I put 2 fresh none blended reapers in it in hopes of upping the heat level. Just sliced em in half

I'm not quite sure I understand what you're asking. Are you attempting to ferment this sauce? If so, it looks like you just started it 2 days ago (?). What (exactly) is in the recipe you used? Judging by some of the ingredients you posted (ACV, lime, cherries, blueberry juice), that sauce is already pretty acidic. I think you'd have a hard time kickstarting a ferment with these ingredients without the addition of some kind of "starter" and another source of sugar. It also sounds like you're complaining that the sauce doesn't "smell" hot enough(?) Please correct me if I'm wrong

Are they just floating around in there, like ice cubes? :rofl: I'm confused

I'm not trying to be difficult, but more specific questions (and a complete recipe) would help out a lot :cheers:
