ok i am back and i got a brisket here and i will be putting some baby back ribs on in a few and some sausage also but here are a few pics more will come ....i also am using oak wood only this time....

thanks man it really looks good now!!!! here are a few more pics ... the brisket has been on now for alomost 8 hours... i will let it go for atleast 2 more hours maybe more if it needs it, but i dont think it will... i took a pic of the sausage and the ribs sorry i did not get a before pic of ribs .... the ribs have been on 2hrs i am guessing.. they might need more like 1-2 hrs more... i had to take a pic of the temp on there...

sorry the pic is kinda messed up... i also have a pic of a ham i did a few days ago and i smoked it with oak and it was on there 4hrs in that pic... it came out badass... !!!

Wow that looks amazing! I had a small cook this sunday and was upset that the local market ran out of brisket! Now those pics make me want to cook in the rain this weekend!

ok here is what i ended up with .... the brisket came out so nice !!! it was on for 10 hours... the temp stayed around 250-300 the whole time... i sure love the oak wood i got i think i only used like 6-7 logs.. it gives a nice light smoke and i really like the way it smells ... the first pic is right before i take it off...

this pic is what i ate for dinner pinto beans with beer in there and jal. and some of that ham that i had left form the other day and some other good stuff,and mex. rice ... all good stuff here tonight

here are my ribs we only ate 2 of them we are going to save them another day... they came out real nice also.. a bit dry i think i had them to close to the fire i should have pulled them back a bit... still very good ... enjoy
