Harvested 18 New Mexico 6-4L peppers yesterday, got another dozen waiting to mature. Ate one raw, and another roasted over gas burner. Raw tasted like bell pepper, roasted tasted like heaven. So under the broiler they go!
That's what I would do when I would buy them, on my little Smokey Joe over mesquite. I just wanted to try oven roasting for a quick fix. They came out great, but I do prefer the nice Smokey fire roasted flavor.
