food-bev salad dressing / frying oil

alright is there any Italians here or people with Italian taste buds :lol:
I'm looking for a decent salad dressing using olive oil,some herbs & with a kick to it (chiles) but not insane heat either. I guess I'll have to decide which chiles to add or how much for my taste.

I know it'd take a couple weeks for the oil to reach its full flavor.

I guess this olive oil mixture might also be used for frying up chiles.
so any thoughts on a good recipe for a salad dressing/oil for frying up stuff.

& is there any surefire methods to prevent mold from growing in the oil ? other than keep the bottle in a cool dark place.
