flavor Salting the food.

I made my biggest mistake last night, didn't salt a chilli batch I made, my question, can I chuck it in a pan and cook it

again with salt, or is it buggered. Thanks---Mic

couple questions-
you made a batch of chilli/hot sauce and didn't salt it.
how is it packaged right now? Bowl in the reefer? Jars or bottles with sealed caps meant to be shelf stable?
what are the other ingredients in the sauce? Don't need measurements, just trying to get a sense of the sauce.

My first thought is you can chuck in the pan, re-cook it and re-package it with new caps/lids (depending on how it is packaged now).

Hiya salsalady, sitting in bottles waiting to cool before the fridge, its got about doz reaper and other chillies for

their flavour, along with lime, garlic, bell pepper, onion, apple juice, apple cider v, I must say its a 'kin' hot brew

but full of taste but without saltiness, and I do know there is something missing---Mic
 
Mmmm, that sounds like a good tasting sauce! What kind of bottles? can you post a picture? not necessary, just wanting to know what we are looking at. Woozy bottles, Mason jars...

Generally, and especially as this has just been made, and it sounds like the bottles or jars are some kind of sealing kind...you should be safe to kettle it, cook it, WASH/RINSE/SANITIZE the original jars, and use NEW lids or caps. You want to get everything back to original condition like it was originally packed. If you don't have NEW lids or caps, I'd leave it in the properly sealed bottles until you get the replacement materials. Then empty all the jars, heat to temp, add salt, and process into the bottles. You can also, refrigerate for a couple days or even empty the bottles and freeze the sauce until you are ready to repack the sauce.

The WASH/RINSE/SANITIZE is simply wash with warm soapy water, rinse under fresh water, and sanitize with a simple bleach and cool water solution. Details in the Making Hot Sauce 101 thread.

PS- the previous post was kind of geared towards sauce packaged in shelf stable bottles. If the sauce is just going to be refrigerated...just refrigerate it for now until you are ready to re-process.
 
Yep, I'm losing it, me mate said where's the tomatoes and coriander, ' tomatoes' no wonder I forgot the salt

going to redo it tomorrow---Mic
 
Well, I didn't recook my chilli, but made a salt and coriander mix, puts a whole different taste profile

into the chilli and I'll stick with till my next brew---Mic
