sauce so far

after last night, 151 5oz bottles put up.....5 sauces....once more to go
 
 
last night was orange night......a slew of orange peppers, ginger, carrot, garlic, fresh squeezed orange juice and agave syrup....

red was something like 52 bottles......lots of cranberries, lots of varieties of reds, and pomegranate juice (as well as agave....i like a little sweet balance)
 
 
there's a chocolate that got morugas, carmel bhuts and a few other browns....some smoked garlic, smoked onion, purple carrot and agave....this one came out a little purple in color
 
yellow was simple....fatali, devil's tongue, brain strain and a few others....just enough papaya, mango & agave to give it depth....but you'd be hard pressed to name the ingredients if i didn't tell you.....i like a little depth, but i want the peppers to shine....
 
the green got smoked jalapenos and a few other greens.....smoked onion...smoked garlic....lemon, lime & agave......it is not hot, but people seem to like it so far.....

i've gotta do one more batch of blend (i saved some chocs, yellows, reds & oranges).....the non-chocolates will get some apple smoke....this will get carrot, smoked onion, garlic, citrus and whatever else i feel like putting in....this is always my most complex flavored sauce......and usually my favorite.....although this year the orange came out great, i had never used fresh ginger before, and i just winged it.....and nailed the right amount
 
 
i should end up with roughly 175-180 bottles out of my garden this year ;)
 
p.s. - these are all vinegar based sauces

225, but not all of those went into sauce/were superhots
 
some plants produced great, some not at all.....my timing was off, a few plants went out early, and they got a little chilled early.....all in all it was a fair to decent year
 
 
send me a PM and we can work something out; just don't wait too long....making blend tonight, and will throw up my official "it's ready, order now" post on the Facebook......i'll sell all of the 180 or so bottles within probably 2-3 weeks.....and some of the colors are limited

i made 32 bottles of blend today.....a mix of yellows, oranges & reds went into apple smoke for 1.5 hours....along with a couple vidalia onions and 8 garlic bulbs
 
at the same time, a good sized ginger root, persimmon & purple carrot went into cider vinegar to simmer
 
smoked peppers went in with onion & garlic and more vinegar and h20
 
 
after blended & strained, added the juice of 1/2 a lemon, some agave syrup and xanthan gum
 
 
this one might be my favorite....although the orange & chocolate came out nice......
 
 
as with all of them, you'd be hard pressed to tell me what exactly is in the sauce flavor wise.....but if i eliminated anything you'd know.....the peppers are the boss, but the other stuff provides depth

32 bottles of blend, giving me 184 bottles for the year....time to sell ;)
 
 
the blend got red/yellow/orange peppers in 1.5 hours of apple smoke plus some chocolates and burgundies that i didn't smoke.....2 smoked vidalia onion, 8 bulbs of smoked garlic, one whole fresh ginger root, 4 ripe persimmon, 4 purple carrots, apple cider vinegar, h2o, agave syrup and the juice of 1/2 a lemon (and xanthan gum)
 
the orange is my favorite, but the blend is excellent too.....
 
 
almost time to start for next year ;)
 
ha.....opened up sales at 830am this morning (eastern)
 
 
it is now 1:15
 
 
 
62 bottles sold.......green is sold out already
 
 
 
and the blend i made last night has now sat over night, and it is way good
 
 
 
carry on ;)
 
but ya better hurry up and ask for one, because orange and green sold out......i'm down to 8 blend & 4 chocolate (45 red & 22 yellow left)
 
 
sold 105 in 12 hours today ;)
 
 
 
imho blend is the best ;)  (of what's left...orange was pretty darned good)
