smoking Sausages!!

hey all!
I made some sausages this days. I buy one book, "charcuterie" and I'm testing my skills of sausagemaker!!! kkkk
i made italian hot sausage, and Kibaumm style hot sausage ahahahah i just use what i like! some thyme, ginger powder, Scovie Powder, garlic, onion, Run and some vinegar!

Except for the stuffing part, I love making my own sausage meat! How many different flavors did you make?
 
hey Kibaumm ,I'm new to sausage making and have a few questions.. Do you add any curing salts? what about meat/fat ratio?
