What are some good milder varieties that would make nice sauces?

There are hundreds of them, I'd recommend you try a couple of varietes of baccatum.

Just seems with every other site I got to that isnt US based doesnt have their prices and does not deal in US currency.

Why is that a problem? There are plenty of websites that help you with the conversion and update the exchange rates daily (I use a Swedish one so can't help you with a link) if you need help figuring out how much €4.65 is

For what you want The Hippy seed company would be your best bet.

As for USA seed companies I have ordered and received quick shipments from the following companies.
