Wanted to share this with you guys, it is the best Mac&Cheese I have ever had.
1lb bacon
1/4 cup tallow or other fat
16oz. pkg of medium shells or any other pasta
1/2 cup all purpose flour
1tsp ground mustard
1tsp black pepper
2tsp kosher salt
32oz half-and-half
4 cups shredded white american cheese
your favorite rub
2 cups shredded montery jack cheese
1/2 cup panko bread crumbs or crushed corn flakes
peppers of your choice (if desired)
bacon
Smoke 1lb of back for crumbling
Save the rendered fat.
pasta
prepare (al dente) 1 box, 16oz of medium shells and set aside.
roux
heat 1/4 cup tallow or other fat/oil
mix 1/2 cup flour
add mustard, kosher salt and black pepper
mix in half-and-half and stir until smooth
add 4 cups shredded white american cheese, stir until cheese melts
mix in pasta shells
layer ingredients
in a 14x9x2.5 foil pan pour in half of the shells and cheese.
sprinkle with rub
top with half crumbled bacon
top with layer of monterey jack
top with layer of bread crumbs
top with peppers if desired
spoon 2 tbsp bacon grease on top.
REPEAT LAYERING PROCESS!
Smoke It!
put it in your smoker with the temp 250-300, for 1 hour or until bubbling
