Smoked Red Bhut Sauce

Okay - I have a few Red Bhuts that I'm not sure what to do with - figured that I could make a bottle or two of hot sauce. I was inspired to share this project by Paulky's Hot-n-Heavy post and will share my progress. So far, all that I've done is cut an de-seed the bhuts - plus a few butch-t scorpions. Next step - cold smoke them. I prepared a mixture of mesquite and cherry - started them around 3:30 this afternoon - cold smoke will probably go for around 6 hours. I'll take them off tonight and continue with the project tomorrow. If anyone has any suggestions on what may be a good recipe for smoked red bhuts, I'd like to hear it - else, I'll just wing it and come up with something tomorrow. Only had about a gallon bag of pods so I won't get to much of a yield, but I'll have fun making something - deseeded them before starting the cold smoke. Will keep temperature below 150F so they won't cook. I'll post more pictures when I start the sauce. Thanks to Paulky for giving me the idea.

I'll let it go until it until the smoke is finished and leave outside tongiht as its not supposed to frost/freeze. Take up this project in the morning. Maybe another picture if I'm still up later tonight.
 
Hey Buddy,
I smoked some choc habs and devils tounges at 170 until they got a little crispy and then dehydrated them. It was amazing how hot they got. Gave me that heart attack feeling when I ate them. I am interested to see if the cold smoking keeps them calmed down a little, of course your starting with a pepper that is hot as hell already. I nesteled cherry tomatoe halves in each pepper and they were awesome, turned out the consistency of craisins when you eat them but smoky and hot. Keep us posted looks great!

Sunday morning update.

The ingrediants: carrots, red bells, garlic, lemon juice, pineapple, brown sugar, apple cider vinegar, onions, and the star of the show - the cold smoked bhuts.

Had a little accident and spilled a good amount (and I mean a good amount) in the sink. This is what I ended up with 3 8oz bottles of really tasty smoked bhut jolokia hot sauce. Have a batch of yellow scorpion with apples on the stove now.
