fermenting Sourdough Hooch for fermentation

When using hooch for hot sauce what is the recommended amount to pitch for a good fermentation? Is there a rule of thumb you all use?

I put about 1 TBS of hooch in my last batch of 3/4 QT. It’s fermenting but it seems not as active as my other 2 batches that I added probiotics pills only to.
