Hola, Ive noticed that my guajillo and arbol sauce mellows at a pretty good rate even after 4-7 days. I hot-water bathe and usually place in fridge the same night or next day. Any suggestions to keep it spicy as intended? Thanks all!
About what percentage of the sauce is peppers and what other ingredients are in it? First thing that comes to mind is toss in a habanero or two.

I toss a Scorpion or two in the mix. Anything really hot so you mostly get just the heat increase and not the flavor. Dried works even better if you want to avoid a flavor change.
