food Strawberry Mango Ghost Sauce

I made some strawberry mango ghost hot sauce yesterday.  It is delicious!
 
I followed this recipe (less the salt).  I added a little xanthum gum to thicken it also.

Tried it on some vanilla ice cream and it is amazing.  You taste the peppers, then the strawberries and mango, lastly the heat.  Then the ice cream makes the burn just fade away so you have another bite...

 Of course this was the first dose, I added more sauce for almost every bite once I found out how good it was.

Sounds tasty....and I just happen to have most everything on hand.
Did you happen to check the pH?
And after checking out the recipe, I assume it is intended to be kept in the fridge since it isn't heated and processed in jars or bottle.
 
PH was something like 3.2 or 3.4.  I did heat it to pasteurize it and sterilized the bottles just like normal sauce making.  I am treating it as shelf stable because of the PH and the way I bottled it.
