food Stuffed Peppers

For dinner tonight I made some stuffed manzanos for the wife and I, and some stuffed mini sweets for the kids. The manzanos came from the local Mexican market, they also had some dried tepins that I picked up. Recipe time:

12 manzanos
1 bag mini sweet peppers
a few dried tepins
1 pound ground turkey
1 pound bacon
1 medium yellow onion
1 tbsp garlic
1 8oz package cream cheese
6 oz shredded colby jack
1/2 tsp salt
3 tbsp no salt taco seasoning
2 cups chicken broth
1 cup wild rice blend

Start with your bacon, throw it in the oven on a cookie sheet at 400 and cook it until its nice and crisp. Mix the wild rice with the chicken broth and bring to a boil, cover and simmer for 50 min. While those are cooking start prepping the peppers. First up, manzanos, cut a hole in the top where the stem is, and pull out the seeds with the stem. Next cut the mini sweet peppers in half and remove the seeds and ribs with a melon baller. Set the peppers aside and dice up the yellow onion. Heat up some oil in a non-stick skillet over medium heat and throw in the onion with the garlic. Don't forget about the bacon. A few minutes after the onion and garlic have gone in the pan its time to toss in the ground turkey. Grind up the tepins, I used my kick ass mortar and pestle. Cook the turkey until its just about done and mix in the salt, taco seasoning, and ground tepins. By the time those are nice and mixed in, the turkey should be done cooking. Chop up the crispy bacon and toss it on top, follow it with the wild rice. Turn the heat down to medium-low and mix in the cream cheese and 3oz of the shredded cheese. When all of that is mixed in, kill the heat.

The easiest way I've found to fill the peppers is use a 1 gallon ziplock with a corner cut out. Load the mixture into the ziplock and fill up those peppers! Sprinkle the last 3oz of shredded cheese over the top. Bake in the oven on a couple cookie sheets at 375 for 25-35 minutes. Let stand a few minutes after removing from the oven, and enjoy. My wife calls the stuffed manzanos "death by pepper." Food porn to follow.

I've seen them as high as $10/lb.
Mr. SalsaLady ran into a guy selling them out of a cardboard box on the sidewalk for that much.
Damm good pepper tho.
