Tasty Peppers

Hey guys,
I need some help figuring out what ultra hot peppers I should use in my hot sauces. I want some flavorful vineagar based sauces, ultra hot hot sauces, and non-vineagar based fruity hot sauces. I am having trouble figuring out what to use. And when I say ultra hots, i mean ghost chili and above.

Also for the fruity sauce since you don't want it to be a vinegary sauce you could ferment the pepper and non fruit ingredients and then add the fruit during the final processing so that it doens't loose the sweetness from the fruit. If you want additional sweetness to the sauce try using Agave nectar or Honey instead of just adding sugar to give the sauce additional character. If you don't ferment then use lime of lemon juice as your acid. Other peppers than Dawg mention to use would be Fataliis or Joanahs
