Univ. of Ark Food Science has a program where they help start up small food business.
Walk through FDA and State of Ark. requirements', provide a facility to manufacture. etc.
honest comments on site, labels, etc.?

I have a question regarding your ingredient labels - they're all identical just listing "pepper mash" instead of the individual peppers used, is there a reason to do it that way? Are you pre-making your own mash and then making your sauce with it? Are you fermenting them or just pre-making mash to save time during production?

Maybe I've been assuming incorrectly but when I've seen an ingredient listed as "mash" on a label I'd assumed they were using a pre-made mash they purchased from another source, but I also noticed on your website you mentioned using some peppers from your own garden. Do you make everything from fresh peppers or are you buying pre-made mash for some of it?

I think it's just because all of their sauces use the same recipe except for the peppers so they just use the same ingredients list. The peppers used are in the title except for the Original. But this also allows them to adjust the blend if needed in case one pepper is not available. It also affords the flexibility to experiment. Printing labels is expensive and "peppers" is common, at least they let us know by the title and description here.

sorry for the delayed response. I got busy and forgot to go back to this thread.

You are correct, “pepper Mash” is label friendly in case I need to get creative due to supply etc.

As business is growing, I cannot supply the entirety of mash from my own garden any more so I have to buy commercially available fermented mash/puree.

Each batch contains mash from peppers grown and fermented from our garden
