Bok choy in bacon fat sounds goodern' hell.
 
But I dig duck fat better.
 
And some thai chiles, garlic, onions, and oyster sauce ain't a bad 'thang.

Ate a shitton (OfficialSoFloMeasurement) of bok choy and OD'D on it.

Bok choy knows kung fu.
 
Dug some razor clams @ the 6am low tide this morning.  
 
Made a compound butter with fresh garlic,hot rod serrano,flat leaf parsley all from my garden.
 
Lightly grilled the razor's with some slices of baguette and hit everything with the compound butter while on the grill,  squeezed a grilled lemon over them when they came off the heat.

I've never had clam that shape ...
They are really good. I say dig but really you have to hunt them. Very sly little bastards, if they see your shadow of feel you walking up,they shoot down their holes. They can shoot down 2ft or more faster then you can blink. You have to go at the lowest tides, yesterday and today were the lowest of the month. I walk barefoot and sneak up on them, you have to grab them before they shoot down the hole. took me little over an hour the get that dozen, but worth it imo.

yes, very similar. They can get tough and chewy if overcooked. Other then grilled I think they make great chowdah,fied clam strips and ceviche.They aso stay on a hook really well. I can dig steamers,razors,quahogs and surf clams here and prefer steamers and razors.
