Nothing special, but ended up to be so good and tasty...

Tuna with Locato sauce (made with Locato, garlic, cucumber, tomato, evo, asiago, salt, just blended and not cooked). Great together.
 
Teriyaki habanero smoked steelhead. I prefer sockeye but this turned out surprisingly good.

The sauce used as a base for the brine is a commercial sauce from Rothchild's Farms. It contains no salt. Its actually very mild but i love the flavor. The fillets had very little heat after smoking but they had a very "teriyaki like" flavor. I had a hard time getting my smoker cool enough so a little of the fat started to run.
 
Brine i used:
1 cup Rothchilds Farms Roasted Pineapple Habanero sauce
1/4 cup Chardonnay or preferably mirin if you have it.
1/4 cup brown sugar
1/4 cup Japanese soy sauce
 
BTW if you love a more traditional smoked salmon, try crumbling some on top of a bowl of clam chowder instead of bacon. Its outstanding!!!

IIRC they lasted about 2-3 days. Smoked salmon is one of my all time favorite foods. Trying to NOT eat all them in one sitting is 100 times worse than eating 1 Lays potato chip. I found some fresh wild caught sockeye. Not sure if i want to attempt smoking them with as hot as its been.

I'm always down to share some of those trout eggs! It's amazing, because they grow just the fillets. It saves the convenience of cleaning and deboning the fish.

I don't eat fish much, so it's not for me ... just saw it in the news ...
 
Halibut and shrimp and canned solid white albacore are all that I require from water ...
 
Maybe some very occasional crustaceans ...
