The Sample Platter

I got some fresh fatalli's from a god friend and dehydrated a few. They lost their bright yellow. Is there a secret to keeping the color? In my house peppers go in the dehydrator and come out 2 or so days later when bone dry. I have submerged dried pods in water for 3 hours and still not soft. They all tend to brown some(any pepper). I assume they are cooking some. To keep the color do you just go until still a little soft ten let air dry for the rest???? I know if I straight air dry my caribbean reds they grow fuzzy mold inside(been there, got that). So if I get them almost bone dry them turn it off will they be ok to air dry that last little bit?????
